Marinated Vegetable Salad
Marinated Vegetable Salad Recipe By: Pat Myers/Shawsville Ingredients: 1 one-pound can French style green beans 1 one-pound can petite green peas 1 one-pound can shoe peg corn 1 medium jar pimento 1 small can sliced water chestnuts 1 cup chopped onion 1 cup chopped celery 1 small diced green pepper 1 cup thinly sliced or diced carrots **Drain all canned vegetables and mix with the remaining ingredients. Marinade: 1 cup sugar 1/2 cup salad oil 3/4 cup white vinegar (because I like the tanginess of apple cider vinegar, I use 1/2 cup white and 1/4 cup apple cider vinegar) 1 tsp. salt 1 tsp. black pepper Instructions: Bring to boil all marinade ingredients, making sure sugar is dissolved. Let cool thoroughly. Pour marinade over vegetables; mixing well. Cover and chill well before serving. This recipe is even better the second or third day!
