Cedar Plank Roasted Salmon
CEDAR PLANK ROASTED SALMON WITH SESAME GREEN BEANS
Recipe By: Chefs David Oehring and Chad Brodkin/ Preston's at the Inn at Virginia Tech
Ingredients:
6 oz. Salmon Filet (2)
4 oz. Ancho Barbecue Glaze
2 Cedar Planks
2 Sweet Corn Polenta Cake
6 oz Fresh Green Beans
2 tsp Sesame Seeds
2 oz. Butter
2 oz Sesame Oil
Salt and Pepper to taste
Salmon and Polenta Cake Procedure:
Place salmon filet on cedar plank, glaze with ancho BBQ and roast in a 450F oven for 8 minutes. Mark off polenta cake on the grill and finish in a 350F oven for 12 minutes.
Sesame Green Beans
Heat butter in a wok or skillet. Add sesame seeds, and stir-fry for about 30 seconds.
Add the green beans, and stir-fry over high heat for 3 to 4 minutes. Add the sesame oil and salt and pepper; toss until beans are coated.
Begin Plating. Eat and enjoy!
